A Look Into Birba's New Pasta Menu

Making pasta by hand is a time honored Italian tradition, one that is lost in most modern day households as it is so readily available and inexpensive to purchase.  In an effort to honor their Italian routes and pay homage to this tradition, Birba launched a new pasta menu a few weeks ago featuring a variety of hand made pasta dishes!  I had the pleasure of going into their kitchen and photographing a little bit of the process of how their ricotta and mint raviolis are made.  I've never been to Italy, but chatting with Joe, Birba's sous chef about life and our roots, as he rolled out the dough and formed each little square by hand, made me feel as if I was in Italy chatting with an old friend around the kitchen table.  You can truly taste the time, love and care that goes into each of these dishes.  For me, knowing that someone took the time to fill each of the raviolis on my plate individually, really made me sit down and not only taste but appreciate each of the components in the dish, out of respect for the food and for the person who made them!  Well?  What are you waiting for!  Head on over to Birba with some friends and try out a few (personally I love the raviolis and the pappardelle but they are all great!) xx sarah

Happy Friday! - F10 Updates!!

Happy Friday folks!  There is something so exhilarating about the start of a new weekend, 2 full days of freedom!  YIPPEE!!!!
I have a few fun updates for you all regarding F10 happenings!

If you haven't been to Birba lately, we have new menus!! High quality with a great artisanal feel to them!  Not only are the menus new, but there are a few new items on the menu too!  We have some great seasonal dishes right now including the squash blossom and pancetta pappardelle, one of my personal faves!  

You also may have seen a few new faces on the property, formal introductions to come soon but someone who I am very excited about working with is our new resident mixologist and beverage director straight from New Zealand, Steen!  Steen will be helping to create new cocktail menus for our restaurants as well as help create some fun recipes to share with you all on the blog!  Be on the look out for a full feature with Steen soon!

If you haven't noticed, the Alcazar has been looking mighty relaxing lately!  I sat down with Robert Hunt, the hotel's GM a few weeks ago for a fun interview which you can read here!  We are also running a few AHHHmazing deals at the hotel right now which you can see here! Including the 1-2-3 or Blue Skies, both offering specials for a 3 night stay!  Perfect for a staycation or extending your vacay into the week!

And last but certainly not least, Mr. Lyon's!!  Click Here to see what you can expect to feast on at the newest addition to the F10 line up.  I am incredibly excited about having fritto misto back in my life and about trying POTTED RILLETTES (wild boar, duck confit, wild salmon) -- and pretty much every.single.one of the side dishes.

My Waffle Addiction & a Customer's Thank You Note

Cheeky's serves some of the most delicious and fluffy Gluten Free waffles that I've ever tried! Although I don't have a gluten allergy myself, I do have plenty of friends who do, to know that the struggle to find a good tasting waffle is real.  Whether you like them simple and unadorned or smothered in ice cream and bananas, there is just something so classic about a waffle breakfast. We love pleasing our patrons at Cheeky's and Birba and are always over the moon when anyone goes out of the way to share their appreciation for our food.  In honor of Thanksgiving and in the name of gratitude I wanted to share this email that we received from a Mom who had breakfast at Cheeky's awhile back...

"Greetings! My family and I came to Palm Springs for some sun from Portland, Oregon last week and became addicted to your gluten free waffles. You see, my daughter can't eat gluten and so is usually unable to enjoy things like pancakes, waffles, etc. When she took a bite of your waffle she stopped and looked at me and said, "This is the best thing I've ever eaten." I know it is a long shot but I'm wondering if you would be willing to give me your recipe. I am so desperate to find things to feed her and she was just so happy eating your waffle. So many of these gf recipes taste like cardboard but you have perfected the gf waffle!  We will be in again on our next trip for sure.

Thanks for an amazing breakfast!!!"

Although we can't necessarily share our recipe, I can tell you that a lot of the magic of these waffles happens in the industrial waffle press that we use to cook our batter and that any good dish starts with great high quality ingredients!  In any service industry profession, notes like these are what keep us loving what we do!  There is nothing better then knowing you provided an enjoyable and memorable experience for a guest or client!  If you haven't come in to Cheeky's to try the waffles hopefully you will now!
