Blueberry Mint Mule Recipe

I will admit, this cocktail looks a little Christmasy with the green and pink, but it tastes like pure spring!  It is a bit of a hybrid between a moscow mule and a mojito, two of my absolute favorite boozy beverages.  This recipe includes a simple twist on the moscow mule classic.  By adding blueberries we introduce a seasonal fruit that is oh so delicious and can be used in a multitude of ways around the kitchen!  Did I mention the beautiful color of this cocktail? It can also be attributed to ever amazing blueberry and don't forget the mint, an addition that I think keeps the bevvie light and refreshing!  Hopefully you'll give it a whirl this weekend while you are lounging poolside :)

If you haven't made it into Mr. Lyons yet, the newest addition to the F10 family, call and make a reservation ASAP!  We are super excited to be sharing the space and the delicious food with all of you!  You can check out some photos of the dining salon and get some more information including hours here! xo sarah (read on for the recipe!)

yield 2
Ingredients
5-7 blueberries
5 lime wedges
4-8 mint leaves
3 ounces vodka
soda water (optional)
1 can of ginger beer

Method
- In a large shaker muddle blueberries, limes, and mint! **
- Add ice and vodka to shaker and shake vigorously for 15-20 seconds.
- Empty contents of shaker evenly between two cocktail glasses.
- Fill with ice.
- Top with ginger beer and a splash of soda water. **
- Garnish with lime wheel and a mint sprig.

**Notes
- If you love mint, add a bunch (I do!) if you aren't a big fan you can leave it out completely or only add 2 leaves per beverage!
- I like to use a little bit of soda water in my mules to keep them low in calories and super refreshing, too much ginger beer can be overwhelming in my opinion!

My Waffle Addiction & a Customer's Thank You Note

Cheeky's serves some of the most delicious and fluffy Gluten Free waffles that I've ever tried! Although I don't have a gluten allergy myself, I do have plenty of friends who do, to know that the struggle to find a good tasting waffle is real.  Whether you like them simple and unadorned or smothered in ice cream and bananas, there is just something so classic about a waffle breakfast. We love pleasing our patrons at Cheeky's and Birba and are always over the moon when anyone goes out of the way to share their appreciation for our food.  In honor of Thanksgiving and in the name of gratitude I wanted to share this email that we received from a Mom who had breakfast at Cheeky's awhile back...

"Greetings! My family and I came to Palm Springs for some sun from Portland, Oregon last week and became addicted to your gluten free waffles. You see, my daughter can't eat gluten and so is usually unable to enjoy things like pancakes, waffles, etc. When she took a bite of your waffle she stopped and looked at me and said, "This is the best thing I've ever eaten." I know it is a long shot but I'm wondering if you would be willing to give me your recipe. I am so desperate to find things to feed her and she was just so happy eating your waffle. So many of these gf recipes taste like cardboard but you have perfected the gf waffle!  We will be in again on our next trip for sure.

Thanks for an amazing breakfast!!!"

Although we can't necessarily share our recipe, I can tell you that a lot of the magic of these waffles happens in the industrial waffle press that we use to cook our batter and that any good dish starts with great high quality ingredients!  In any service industry profession, notes like these are what keep us loving what we do!  There is nothing better then knowing you provided an enjoyable and memorable experience for a guest or client!  If you haven't come in to Cheeky's to try the waffles hopefully you will now!

Huevos Rancheros Recipe, a Cheeky's Must-Have!

WHAT A WEEKEND!  Zero judgement if you are still taking a ride on the struggle bus from the pride extravaganza because lord knows I am!  If some combination of vitamin water, coffee, bloody mary's and bacon hasn't done the trick, then consider this recipe your ticket to freedom. May I introduce, Cheeky's huevos rancheros, an old classic with a twist!  The Cheeky's version is different for a few reasons, the sauce is pureed, the tortillas are fried (ah-mazing) and they use Peruano beans instead of pinto!  Below you'll find the recipe to the amazingly delicious ranchero sauce, and in my opinion what really sets this dish a part from other's that I've had.  You can pour the sauce over the eggs and beans and use fried or warmed tortillas!  Happy hydrating friends and don't forget to check back in later this week for a recap on some of last weekend's fun! xx sarah

Ranchero Sauce
Ingredients
1 pound fresh tomatoes (roma, preferred)
1 bunch cilantro
1-2 serrano chiles
1 yellow onion, quartered
4 cloves garlic
2 tablespoons olive oil
1 teaspoon freshly ground pepper

Instructions
- Cook the ingredients in a large sauce pan for about 20-25 minutes (best to use a pan where the tomatoes will be snug and fill the pan) until the tomatoes start to break down.
- Take off the stove and wait for sauce to cool.
- Blend until sauce is pureed, add salt to taste.
